GlobeXplore, a company with strong regional roots

Founded in 1986, GlobeXplore (a subsidiary of the Jean Hénaff group) specialises in creative cuisine and in producing, processing and selling high added-value edible seaweed and premium and gourmet products.

Based in Rosporden in Brittany, the company markets its products under the brand names Algaé (for all seaweed-based recipes), Perles de Saveurs (creative cuisine) and Christine Le Tennier (export and delicatessen). 

Driven by a culinary passion combining innovation and quality, our strategy focuses on our consumers and on environmental issues. For us, gustatory enjoyment is essential and inseparable from a healthy, balanced diet that respects the environment and natural resources.

A tightly-knit family business with 35 employees, our organisational structure includes the following departments: Quality, R&D, Marketing, Production, Logistics for small and large-scale exports, Specialist sales teams for export/FAFH/super- and hyper-markets/the agri-food industry/delicatessens/organic products

A company at the cutting edge of encapsulation

Molecular gastronomy emerged in the 1980s under the influence of Hervé This, a French physical chemist with a passionate interest in cooking. Since then, many well-known chefs such as Ferran Adrià, Pierre Gagnaire, Thierry Marx and Marc Veyrat regularly incorporate it in their dishes.

A blend of science, cuisine and art, this discipline opens up an array of new sensations by transforming the textures, colours and shape of food. Spherification, one of molecular cuisine’s emblematic techniques, produces a jellified outer shell and liquid interior.

In 2008, after many years of experimentation and testing, we successfully standardised the spherification process. Using this know-how we can obtain a thin skin through which we insert fruit purée, wine, sauce, vinegar, etc.

We are constantly developing new techniques and products to meet growing demand from chefs and our customers.
