600 g tender beef
1 mango
1 red chilli
1/4 pineapple
Hazelnut oil
Soy sauce
Pepper
Shiso leaf
Extra virgin olive Oil Pearls with chile pepper
Step 1
To prepare the tartare
Chop the beef into small pieces. Finely dice the pineapple and mango. Finely chop the chilli. Mix all the ingredients together: beef, fruit, chilli, hazelnut oil, soy sauce and pepper.
Step 2
Presentation
Fill a pastry ring with the mixture. Add a few shiso leaves and some Extra virgin olive Oil Pearls with chile pepper.
