Mango and passion fruit cream

Step 1
Mix together the whole eggs, egg yolks, sugar, butter, mango and passion fruit coulis and lime juice in a saucepan. Heat the mixture in a bain-marie, stirring constantly until the cream thickens. Pour the cream into a bowl, cover with cling film in direct contact with the cream and set aside to rest in the fridge.
Step 2
Using your fingers-tips, rub the flour and cubed butter together. When the mixture resembles fine breadcrumbs, add the icing sugar. Add the egg and a pinch of salt. Lightly mix all the ingredients together. Wrap the dough in cling film and leave to rest in the fridge for at least an hour. Preheat the oven to 180°C.
Roll out the pastry on a floured work surface. Butter the tartlet moulds and line them with the pastry. Cover with greaseproof paper and baking balls to prevent the pastry from rising up. Bake for 15 to 20 minutes.
Step 3
When cool, remove the tartlets from the moulds and top with the cream. Top with slices of mango, a few blackberries and pieces of kumquat. Garnish with some mango Flavor Pearls.
